Se unge cu unt si se tapeteaza cu faina o tava pentru chec. Se topeste unt (nu se fierbe), se adauga bananele facute piure cu furculita, zahar, vanilie, scortisoara, ou batut usor. Se amesteca bine si se adauga incet faina amestecata cu sare si praf de copt. Se omogenizeaza, se adauga nucile, se amesteca si se pune in tava.

Se presara deasupra nuci si bucatele de rahat.

Se coace la foc mediu pentru 45-50 de minute.


How to Make Keto Banana Bread

This keto banana bread tastes just like the original. It’s nutty, dense, and packed with banana flavor so you can enjoy the breakfast bread you know and love.

Ingredients

To make this keto banana bread we will first need the dry ingredients. We used a blend of both almond flour and coconut flour to achieve the ideal quick bread recipe texture. Then we added baking powder for rise and cinnamon for a warming spiced flavor. Lastly you will need some salt to bring out the sweetness of this banana bread recipe.

Wet Ingredients

The wet ingredients consist of softened unsalted butter and cream cheese. We used softened butter over melted butter to allow for more structure in the batter. Unsalted butter is usually the way to go when baking, because salt is added to the dry ingredients. However, if you only have salted butter just scale back on the added salt above. Next you will need granular erythritol (or any other keto sweetener such as monk fruit or monk fruit and erythritol blends). Normally we will also use a combination of liquid stevia to balance out the sugar alcohols, so make sure to have some stevia on hand too. The last ingredients are eggs, almond milk, chopped nuts, and the secret ingredient: banana extract.

Making Low Carb Banana Bread

If you are ready to get started and make keto banana bread you’ve come to the right place. Get out your loaf pan and let’s get started with this easy keto banana bread!

Begin by preheating your oven to 350F. Line a 9-inch loaf pan with parchment paper and set aside. Then in a small bowl, combine the flours, baking powder, cinnamon, and salt. Mix all the ingredients together well to prevent clumps. In a different bowl that’s larger, combine the softened butter (not melted butter), cream cheese, erythritol, and stevia.

Once the butter, cream cheese, and sweeteners are creamed together add the eggs in one at a time. When all the eggs have been added you can put the almond milk and banana flavor in with it. Mix well again (we used a hand mixer).

The egg mixture may look a bit curdled, but that’s okay. The batter will come together when everything is added.

Sprinkle the dry mixture into the wet and stir everything throughly to prevent clumps of flour.

Now it’s time to fold in the nuts of choice. You can also add chocolate if desired.

Transfer the batter into your parchment paper lined loaf pan and then add any desired toppings. Cover the recipe with aluminum foil and bake the banana bread for 45-50 minutes. Remove the foil from the top of the recipe around the 40 minute mark. This will allow the top to brown. Remove from the oven once the center is mostly set, and a toothpick comes out almost fully clean.

Allow the keto banana bread to cool in the pan completely before slicing.

Storing Almond Flour Banana Bread

  • Storing– This keto banana bread recipe should not be stored at room temperature. Instead, store it in the fridge.
  • Freezing– We recommend slicing the banana bread before freezing. Keto flours create a different type of crumb than regular flour, so it will freeze as one unslice-able brick if it isn’t cut. Place the sliced banana bread into ziplock bags and freeze to prevent sticking.

În banana bread putem adăuga miez de nuca, ciocolată, stafide, merișoare, nucă de cocos, sau chiar fructe confiate, pentru o aromă aparte. Când ai poftă de un dulce sănătos și rapid poți încerca banana bread, alături de o cafea, un ceai sau un pahar cu lapte.     2 banane coapte (cu coaja neagră)

Cum se prepară banana bread?

Decojim bananele de coajă, apoi cu ajutorul unei furculițe le pisăm. Pentru această rețetă am folosit banane foarte coapte (cu coaja neagră) deoarece sunt foarte dulci și aromate. Într-un castron încăpător punem untul care este la temperatura camerei, apoi adăugăm zahărul, zahărul vanilat și amestecăm până incorporăm zahărul. Adăugăm cele 2 ouă și cu ajutorul unui tel omogenizăm compoziția. Adăugăm piureul de banane și amestecăm bine, apoi adăugăm făina, sarea, praful de copt, scorțișoara și amestecăm bine. La final adăugăm miezul de nucă și stafidele și le incorporăm în aluat.

Transferăm compoziția într-o tavă de chec, pe care am tapetat-o cu hârtie de copt, apoi băgăm la cuptorul preîncălzit la 180 de grade pentru aproximativ 40 de minute sau până trece testul cu scobitoarea.

Banana bread (chec cu banane)

Eu am mancat “banana bread” acum ceva vreme si sincera sa fiu, am uitat complet de ea pana azi cand am intrat pe culinar.ro si am gasit reteta postata de “grasutza” si daca tot mi-am cumparat azi blender nou (da, da… azi a fost o zi mareata pentru mine: cuptor cu microunde si un blender minunat de la Braun) am zis ca merita sa incerc prajiturica. Bine de stiut de la bun inceput ca e o prajitura foarte aromata, si mie mi-a mirosit a Craciun cat a fost la copt.

Ne trebuie:
– 3 banane coapte
– 1/2 cana de zahar
– 1/2 cana de ulei
– 2 oua intregi
– 2 cani faina alba
– o lingurita bicarbonat
– 1/2 lingurita de sare
– 1/2 lingurita praf de copt
– 2 pliculete de zahar vanilat
– scortisoara
– coaja de lamaie
– fructe uscate si stafide

Ce nu apare in poza, dar sunt esentiale: uleiul, bicarbonatul, coaja de lamaie si scortisoara. Imi cer iertare, de emotii am uitat sa le fotografiez.

Se piseaza bananele, se poate si cu furculita ca doar nu-i obligatoriu sa aveti toti blender Braun ca si mine :P. Peste banane se pun ouale, zaharul, uleiul si se mixeaza bine. Apoi se mai pune faina, bicarbonatul, sarea si praful de copt si se omogenizeaza din nou, la viteza mult mai mica pt ca ne dorim o compozitie pufoasa. Urmeaza fructele uscate si stafidele si se amesteca usor.

In final trebuie sa obtinem o compozitie mai groasa decat cea de chec, sper sa va dati seama de consistenta din poza.

Se toarna tot maglavaisul obtinut intr-o forma tapetata cu faina (in mod normal as fi folosit o tavita de chec, dar nu m-a lasat sufletul sa nu-mi incerc cratita cu pereti detasabili achizitionata tot azi).

Se da la cuptorul preincalzit, o ora, mai mult sau mai putin (depinde de aragaz, cuptorul meu fiind mai rudimentar, nu pot aprecia niciodata corect timpul, de aceea infailibila ramane metoda scobitorii). Se incearca deci cu scobitoarea si cand aceasta iese curata, banana bread este numai buna de halit.

Here are the ingredients you will need .

Bananas: Obviously, the more ripe the bananas, the bigger the banana flavour. That said, I have made this bread with bananas that are just starting to form brown spots with success. Unless you have super small bananas, you will only need 2 bananas here. If you have a little less or a little more than 1 cup of mashed bananas, no worries. Just use it all.

Butter: You can use salted or unsalted butter here. I like unsalted myself, if I have it on hand. If using salted butter, reduce the added salt in the flour mixture slightly.

White Sugar: I haven't tested this recipe with less sugar, but if you are needing to reduce added sugar, you could probably reduce to 1/2 cup. It will, of course, affect the sweetness of the finished loaf, but also possibly reduce the banana flavour, as the sugar works to enhance the banana flavour, as well.

Eggs: Have your eggs at room temperature before baking, for best results. Removing from the fridge 20-30 minutes ahead should do it. I used free-range eggs here, which are quite a bright yellow. Yours batter may be paler in colour.

All-purpose flour: I am a bread baker, so I always have unbleached flour on hand, so that's what I used here. I don't think a bleached all-purpose will change the results at all. I haven't tested this recipe with alternate flours.

Low-carb banana bread

Ingredients

  • 2 (7 oz.) 2 (200 g) very ripe banana, cut in smaller pieces very ripe bananas, cut in smaller pieces
  • 6 6 large egg large eggs
  • 6 tbsp 6 tbsp butter melted
  • 2 tsp 2 tsp vanilla extract
  • 3 cups (12 oz.) 700 ml (325 g) almond flour
  • 4 tsp 4 tsp ground cinnamon
  • 2 tsp 2 tsp baking powder
  • 1 &frasl8 tsp 1 &frasl8 tsp salt

Some like it sweeter

This banana bread is only slightly sweet due to the natural sugar in the banana. If you prefer sweeter banana bread, you can add up to 1/4 cup of erythritol or low-carb sweetener of choice.

Get creative! You can add more spices to the batter like cardamom and nutmeg, or top the loaf with a few crushed nuts, seeds, or low-carb sugar-free chocolate chips.

How to store banana bread

Banana bread can keep for 1-2 days on the countertop, but we suggest keeping it in the fridge where it will last for up to 1 week in an airtight container. You can also slice and freeze our healthy, low-carb banana bread for a month or more. Take out a slice and heat when you need it!

What is the most common mistake with banana bread?

There are two common mistakes. One is not waiting until the banana is ripe. The riper the banana, the sweeter it is. Since this bread has no sweetener, the bananas must be very ripe and spotty, almost brown.

The second mistake is baking it too long. If you make it too long, the bread can come out dry. Make sure to check the bread every 5 minutes or so after the 30 min mark to see if it's done.

Aren't bananas high in carbs?

Yes, a medium-sized banana does have around 24 grams of carbs, but in this recipe, we have included high protein eggs and almond flour so that only a small amount of banana is included in each portion.

Este ideal să pui toate ingredientele în afară de făină, praf de copt, nuci și ciocolată într-un blender și pasează-le bine. (Alternativ, zdrobește bananele cu o furculiță, taie curmalele în bucățele mici și folosește un blender pentru a amesteca toate ingredientele în afară de făină.)

Toarnă compoziția pasată într-un castron și încorporează făina și praful de copt. Toacă grosier nucile și ciocolata și adaugă-le. Taie banana în bucăți mici și pune-le sub aluat. Preîncălzește cuptorul la 180 grade.

  • 2¼ cups all-purpose flour, sifted
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 4 medium ripe bananas, mashed (about 1½ cups)
  • ½ cup unsalted butter, melted and cooled
  • 2 large eggs
  • 1 teaspoon vanilla extract

Preheat oven to 325°. Spray a 9×5-inch loaf pan with baking spray with flour.

In a large bowl, whisk together flour, sugar, baking soda, and salt. In a medium bowl, whisk together banana, melted butter, eggs, and vanilla. Fold banana mixture into flour mixture until just combined. Spread batter into prepared pan.

Bake until a wooden pick inserted in center comes out clean, 50 to 60 minutes. Let cool in pan for 10 minutes. Remove from pan, and let cool completely on a wire rack. Store in an airtight container for up to 3 days.
